Ingredients

For the Cherry Filling:

2 cups fresh or frozen cherries, pitted and halved

1/2 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon salt

For the Crust and Topping:

1 ½ cups all-purpose flour

1/2 cup unsalted butter, softened

1/3 cup granulated sugar

1/3 cup brown sugar, packed

1/4 teaspoon salt

1 large egg

1/4 teaspoon almond extract

1/2 teaspoon baking powder

For the Almond Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon almond extract

Sliced almonds for garnish (optional)

Instructions

Prepare the Cherry Filling: In a medium saucepan over medium heat, combine the cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and salt. Stir well and cook for about 5-8 minutes until the mixture starts to thicken. Remove from heat and let cool while preparing the crust.

Make the Crust and Topping: Preheat the oven to 350°F (175°C). In a large mixing bowl, combine the softened butter, granulated sugar, brown sugar, and salt. Beat until creamy. Add in the egg and almond extract, mixing until fully incorporated.

Gradually add the all-purpose flour and baking powder to the butter mixture, mixing just until combined. The dough will be thick and crumbly.

Assemble the Bars: Grease a 9x9-inch baking pan or line it with parchment paper. Press about 2/3 of the crust mixture evenly into the bottom of the prepared pan.

Spread the cherry filling over the crust, making sure it’s evenly distributed. Crumble the remaining crust mixture on top of the cherries to create a rustic topping.

Bake: Place the pan in the preheated oven and bake for 35-40 minutes or until the top is golden brown. Remove from the oven and allow to cool in the pan on a wire rack.

Prepare the Almond Glaze: In a small bowl, whisk together the powdered sugar, milk, and almond extract until smooth. Drizzle the glaze over the cooled cherry bars, and sprinkle with sliced almonds if desired.

Slice and Serve: Once the glaze has set, slice the pie bars into squares or rectangles. Serve warm or at room temperature, and enjoy your delightful Cherry Pie Bars!
