1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

2 tablespoons olive oil

1 medium onion (diced)

2 cloves garlic (minced)

2 medium carrots (sliced)

2 celery stalks (sliced)

4 cups chicken broth

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

3 tablespoons unsalted butter (melted)

Cook the Chicken: In a large skillet over medium-high heat, add olive oil. When hot, add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through. Remove chicken from the skillet and set aside.

    Sauté Veggies: In the same skillet, add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

      Make the Broth: Pour in the chicken broth and bring it to a simmer. Add the cooked chicken back to the skillet along with the frozen peas, thyme, and parsley. Stir to combine and let it simmer for 5 minutes to allow flavors to meld together.

        Prepare Dumpling Batter: In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, mix buttermilk with melted butter. Combine the wet and dry ingredients until just mixed; be careful not to overmix.
