Chicken Avocado Mango Wraps

2 large whole wheat or spinach tortillas

1 cup cooked chicken breast, shredded (grilled or rotisserie)

1 ripe avocado, sliced

1 ripe mango, peeled and diced

1 cup mixed greens (spinach, arugula, or lettuce)

½ red bell pepper, thinly sliced

½ small red onion, thinly sliced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

2 tablespoons Greek yogurt or sour cream (optional)

1 tablespoon olive oil

Instructions
 

Prepare the Chicken: If shredding a rotisserie chicken, remove the skin and bones, then shred the meat. If using grilled chicken, ensure it’s well-seasoned and cooked through. Set aside.

    Mix the Mango Avocado Salsa: In a medium bowl, combine the diced mango, sliced avocado, cilantro, lime juice, and a pinch of salt and pepper. Gently toss to combine and set aside.

      Sauté the Vegetables: In a small skillet, heat the olive oil over medium heat. Add the sliced red bell pepper and red onion. Sauté for about 3-4 minutes until they are just softened. Remove from heat and let cool slightly.

        Assemble the Wraps: Lay one tortilla flat on a clean surface. Start by spreading a tablespoon of Greek yogurt or sour cream in the center (if using). Layer with mixed greens, shredded chicken, sautéed red bell pepper and onion, and a generous scoop of the mango avocado salsa.

          Wrap it Up: Carefully fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with the second tortilla and remaining ingredients.
