2 cups cooked chicken breast, diced

4 slices of bacon, cooked until crispy and crumbled

1 large ripe avocado, diced

4 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted and chopped

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Bacon: In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels, then crumble into small pieces once cooled.

    Cook the Chicken: If your chicken isn’t pre-cooked, season chicken breasts with salt, pepper, and a pinch of garlic powder. Sear in the same skillet used for the bacon over medium heat until cooked through, about 6-7 minutes per side. Let it cool, then dice into bite-sized pieces.

      Assemble the Base: In a large salad bowl, add the mixed greens, cherry tomatoes, and red onion slices.

        Add Proteins and Avocado: Toss in the cooked chicken, crumbled bacon, and diced avocado.

          Mix the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper. Adjust to taste.
