Chicken Caesar Pasta Salad

2 cups rotini pasta

1 tablespoon olive oil

2 cups cooked chicken breast, diced or shredded

1 cup Romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, thinly sliced

1/2 cup parmesan cheese, grated

1/2 cup Caesar dressing (store-bought or homemade)

Salt and pepper, to taste

Fresh parsley, for garnish

Croutons, for topping (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse with cold water to cool.

    Prepare the Chicken: If you haven’t cooked the chicken yet, grill or bake it until fully cooked and no longer pink in the center, approximately 15-20 minutes. Let it rest, then dice or shred into bite-sized pieces.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cooked chicken, chopped Romaine lettuce, halved cherry tomatoes, diced cucumber, and sliced red onion.

        Dress the Salad: Pour the Caesar dressing over the salad mixture. Toss everything together gently until all the ingredients are evenly coated in dressing.

          Add Cheese and Season: Stir in the grated parmesan cheese, and season the salad with salt and pepper to taste.

            Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
