Chicken Fajita Bowls with Cilantro Rice

For the Cilantro Rice:

1 cup jasmine rice

2 cups chicken broth (or water)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Chicken Fajitas:

1 lb boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and black pepper to taste

For the Vegetables:

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 tablespoons olive oil

Salt and pepper to taste

For Toppings:

Avocado, sliced

Fresh cilantro, for garnish

Lime wedges

Sour cream or Greek yogurt (optional)

Shredded cheese (optional)

Instructions
 

Prepare the Cilantro Rice:

    - Rinse the jasmine rice under cold water until the water runs clear. This helps remove excess starch for fluffier rice.

      - In a medium saucepan, combine the rinsed rice and chicken broth (or water). Bring to a boil.

        - Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes or until rice is cooked and liquid is absorbed.

          - Once done, fluff the rice with a fork, and stir in the chopped cilantro, lime juice, and salt to taste. Set aside.

            Cook the Chicken Fajitas:

              - In a bowl, combine the sliced chicken, olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to coat the chicken evenly.

                - Heat a large skillet or grill pan over medium-high heat. Add the seasoned chicken strips and cook for about 5-7 minutes or until the chicken is thoroughly cooked and no longer pink. Remove chicken from the pan and set aside.

                  Sauté the Vegetables:

                    - In the same skillet, add 2 tablespoons of olive oil. Add the sliced bell peppers and onions, and season with salt and pepper.

                      - Cook for about 5-7 minutes, stirring frequently, until the vegetables are tender and slightly caramelized.

                        Assemble the Bowls:

                          - In serving bowls, start with a generous scoop of cilantro rice as the base.

                            - Top with cooked chicken, sautéed vegetables, and any desired toppings such as avocado slices, fresh cilantro, lime wedges, sour cream, or shredded cheese.

                              Serve and Enjoy:
