Chicken Lettuce Wraps with Blueberry Glaze

1 pound ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, finely chopped

1 cup mushrooms, finely diced

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon brown sugar

1/2 cup fresh blueberries (plus extra for garnish)

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Salt and pepper to taste

1 head of butter or iceberg lettuce, leaves separated for wrapping

Chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Blueberry Glaze: In a small saucepan over medium heat, add the blueberries. Cook down until they start to break apart, about 3-4 minutes. Add brown sugar, soy sauce, rice vinegar, sesame oil, and bring to a simmer. Stir in the cornstarch slurry to thicken and let it bubble for an additional 2-3 minutes until glossy. Set aside.

    Cook the Chicken Mixture: Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic and ginger, cooking until fragrant, about 1 minute.

      Add Vegetables: Stir in the chopped red bell pepper and mushrooms. Cook for another 4-5 minutes until vegetables are tender.

        Incorporate Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until the chicken is fully cooked through and starts to brown (around 5-7 minutes).

          Combine Sauce and Chicken: Pour the blueberry glaze over the chicken mixture. Stir well to coat everything evenly and simmer for an additional 2 minutes to let the flavors meld.

            Season: Taste the mixture and season with salt and pepper as needed. Remove from heat.

              Assemble Lettuce Wraps: To serve, spoon the chicken mixture onto a lettuce leaf, drizzle with additional glaze if desired, and garnish with chopped green onions, sesame seeds, and extra blueberries.
