Chicken Skewers with Lime Salsa

For the Chicken Skewers:

1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to grill)

For the Lime Salsa:

1 cup cherry tomatoes, quartered

1 small red onion, finely chopped

1 jalapeño, seeded and diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt and black pepper to taste

Marinate the Chicken: In a mixing bowl, whisk together olive oil, soy sauce, honey, minced garlic, ground cumin, smoked paprika, salt, and pepper. Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

    Prepare Lime Salsa: In another bowl, mix together the quartered cherry tomatoes, chopped red onion, diced jalapeño, and chopped cilantro. Squeeze the juice of two limes over the mixture, season with salt and pepper to taste, and gently toss. Set aside to allow the flavors to meld.

      Assemble Skewers: Preheat your grill (or grill pan) to medium-high heat. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
