1 lb (450g) ground chicken

2 tablespoons soy sauce (low-sodium recommended)

1 tablespoon teriyaki sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 cup green onion, finely chopped

1/2 cup water chestnuts, diced

1/4 cup carrots, shredded

1/4 cup red bell pepper, diced

1 head of butter lettuce or romaine, leaves separated and cleaned

Sesame seeds, for garnish

Fresh cilantro or basil leaves, for garnish (optional)

Instructions
 

In a large skillet over medium heat, add the ground chicken. Cook, stirring frequently, until browned and cooked through, about 5-7 minutes.

    Once the chicken is browned, drain any excess fat, and reduce the heat to medium-low. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

      In a small bowl, whisk together the soy sauce, teriyaki sauce, rice vinegar, and sesame oil. Pour this mixture over the cooked chicken, stirring well to coat the chicken evenly.

        Add the diced water chestnuts, shredded carrots, and diced red bell pepper to the chicken mixture. Stir to combine and cook for another 2-3 minutes until the vegetables are slightly tender but still crisp.

          Remove the skillet from heat and fold in the chopped green onions, reserving a little for garnish.

            To assemble, take a lettuce leaf and spoon a generous amount of the chicken mixture into the center.

              Top with sesame seeds and any additional herbs like cilantro or basil if desired.
