For the Chili Chicken:

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

For the Rice:

1 cup long-grain white rice

2 cups chicken broth (or vegetable broth)

1 teaspoon lime zest

Pinch of salt

For the Toppings:

1 cup black beans (canned, rinsed and drained)

1 cup corn (fresh or canned)

1 cup cherry tomatoes (halved)

1 avocado (sliced)

½ cup shredded cheddar cheese

¼ cup fresh cilantro (chopped)

½ cup Greek yogurt or sour cream

Hot sauce (to taste)

Instructions
 

Prepare the Chili Chicken:

    - In a large bowl, combine the chicken pieces with olive oil, chili powder, cumin, garlic powder, smoked paprika, lime juice, salt, and pepper. Mix well to coat evenly.

      - Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 7-10 minutes, stirring occasionally until the chicken is browned and cooked through. Remove from heat and set aside.
