Ingredients

1 lb ground turkey

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, rinsed and drained

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup corn (fresh or frozen)

1 cup shredded cheddar cheese

4 large whole wheat tortillas

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Cook the Turkey: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3 minutes, until softened. Then, add the minced garlic and cook for an additional minute.

Add Turkey and Spices: Increase the heat to medium-high and add the ground turkey. Cook until browned and no longer pink, breaking it up with a spatula, about 5-7 minutes.

Mix in Vegetables: Stir in the diced tomatoes (with their juices), black beans, chili powder, cumin, smoked paprika, salt, pepper, and corn. Bring the mixture to a simmer and let it cook for 5-10 minutes, allowing the flavors to meld together.

Assemble the Wraps: Lay out the whole wheat tortillas on a clean surface. Spoon a generous amount of the turkey chili mixture onto each tortilla, followed by a sprinkle of shredded cheese and slices of avocado.

Wrap It Up: Fold the sides of the tortillas in and then roll from the bottom up, enclosing the filling tightly.

Optional - Toast the Wraps: For an extra crispy exterior, heat a clean skillet over medium heat. Place the wraps seam-side down and grill for about 2-3 minutes on each side until golden brown and the cheese is melted.

Serve: Slice the wraps in half, garnish with fresh cilantro, and serve with lime wedges on the side for an added zesty kick.
