2 cups fresh peaches, peeled and diced

1 cup Greek yogurt (plain or vanilla)

1 cup coconut milk

1/4 cup honey or maple syrup (adjust to taste)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup granola or crushed nuts, for topping (optional)

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Peaches: In a medium bowl, combine the diced peaches with lemon juice. Set aside for about 10 minutes to allow the flavors to meld.

    Blend the Base: In a blender, combine Greek yogurt, coconut milk, honey (or maple syrup), vanilla extract, and salt. Blend on high until smooth and creamy. Taste and adjust sweetness if necessary.

      Mix in the Peaches: Gently fold the diced peaches into the yogurt mixture, reserving a few pieces to sprinkle on top later.

        Pour and Spread: Line a 9x9 inch baking dish with parchment paper for easy removal. Pour the peach-yogurt mixture into the dish, using a spatula to spread it evenly.

          Freeze It: Cover the baking dish with plastic wrap or a lid, and place it in the freezer for at least 4-6 hours, or until fully set.

            Cut into Bars: Once the mixture is frozen, remove it from the freezer and let it sit for about 5 minutes to soften slightly. Lift the chilled block out of the baking dish using the overhanging parchment paper. Cut into bars of desired size.
