Ingredients

For the Brownie Layer:

1 cup (2 sticks) unsalted butter, melted

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon salt

1/2 teaspoon baking powder

For the Cookie Dough Layer:

1/2 cup (1 stick) unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1 cup all-purpose flour (heat treated, see instructions)

1/4 teaspoon salt

1/2 cup mini chocolate chips

For the Coating:

1 cup semisweet chocolate chips

1 tablespoon coconut oil (or shortening)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Make the Brownie Layer:

      - In a medium bowl, combine the melted butter and sugar. Mix until well combined.

        - Add in the eggs one at a time, followed by the vanilla extract, and mix until smooth.

          - In another bowl, whisk together the flour, cocoa powder, salt, and baking powder.

            - Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

              - Pour the brownie batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely before adding the cookie dough layer.

                Prepare the Cookie Dough Layer:

                  - In a bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                    - Mix in the vanilla extract and salt.

                      - Gradually add the heat-treated flour (see below for heat treatment) until combined, then fold in the mini chocolate chips.

                        - Spread the cookie dough evenly over the cooled brownie layer. Press it down gently to ensure it adheres.

Heat Treatment for Flour: (Important for safety)

                            - To heat treat the flour, spread it on a baking sheet and bake in a preheated oven at 350°F (175°C) for about 5-7 minutes. Let it cool before using.

                              Assemble and Chill:

                                - Once the cookie dough layer is spread evenly, place the baking dish in the refrigerator for at least 1-2 hours to firm up.

                                  Cut and Dip:

                                    - After chilling, cut the brownie-cookie dough slab into small squares or rounds using a cookie cutter.

                                      - In a microwave-safe bowl, melt the semisweet chocolate chips and coconut oil together in 30-second intervals until smooth, stirring in between.

                                        Coat the Brownie Bombs:

                                          - Dip each brownie bomb into the melted chocolate, coating it completely. Allow excess chocolate to drip off and place the bombs on a parchment paper-lined baking sheet.

                                            Chill Again:

                                              - Place the coated brownie bombs in the refrigerator for about 30 minutes to set the chocolate.

                                                Serve and Enjoy:

                                                  - Once the chocolate is set, your Chocolate Chip Cookie Dough Brownie Bombs are ready to enjoy! Store leftovers in an airtight container in the fridge.
