Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 cup dried apples, finely chopped

1/2 cup unsweetened shredded coconut

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup chia seeds (optional)

1/4 cup walnuts or pecans, chopped (optional)

Instructions
 

In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until well blended.

    Add in the finely chopped dried apples, shredded coconut, ground cinnamon, and salt. If using, mix in the chia seeds and chopped nuts.

      Use your hands to knead the mixture until it holds together; it should be sticky but manageable. If the mixture feels too dry, add a little more almond butter or honey.

        Once well mixed, scoop out tablespoon-sized portions of the mixture and roll them into balls. Place the energy bites on a parchment-lined baking sheet.

          Refrigerate the energy bites for at least 30 minutes to help them firm up.

            Once chilled, store the energy bites in an airtight container in the refrigerator for up to one week or freeze for longer storage.
