1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

¼ cup unsalted butter, melted

1 large egg

½ cup buttermilk

1 teaspoon vanilla extract

4 ounces cream cheese, softened

2 tablespoons powdered sugar

1 tablespoon cinnamon sugar (for topping)

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Prepare the cream cheese filling: In a small bowl, mix the softened cream cheese with the powdered sugar until smooth and creamy. Set aside.

      In a large mixing bowl, combine the dry ingredients: flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk them together until evenly mixed.

        In another bowl, whisk together the wet ingredients: melted butter, egg, buttermilk, and vanilla extract until well combined.

          Merge the mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

            Fill the muffin tin: Spoon about 1 tablespoon of the muffin batter into each muffin cup. Then, add about 1 teaspoon of the cream cheese filling on top of the batter. Finally, cover the cream cheese with another tablespoon of the batter until all the cups are filled.
