Cinnamon Sugar Donut Muffins

1 tsp baking powder

½ tsp baking soda

1 tsp ground cinnamon (plus more for topping)

½ cup granulated sugar

½ cup unsalted butter, melted

1 large egg

1 tsp vanilla extract

½ cup buttermilk (or milk with 1 tsp lemon juice added)

½ cup brown sugar, packed (for the cinnamon sugar coating)

¼ cup granulated sugar (for the cinnamon sugar coating)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon until well combined. Set aside.

      Combine Wet Ingredients: In a large bowl, whisk together the melted butter and granulated sugar until smooth. Add the egg and whisk until fully incorporated. Mix in the vanilla extract and buttermilk until combined.

        Combine Mixtures: Gradually fold the dry ingredients into the wet ingredients using a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.
