Ingredients
  

2 cups all-purpose flour

1 cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 tsp ground cinnamon (plus extra for coating)

1/4 tsp nutmeg (optional)

1/2 cup unsalted butter, melted

1/2 cup milk (whole or buttermilk)

2 large eggs

1 tsp vanilla extract

Vegetable oil (for frying)

Instructions
 

Prepare the Donut Batter:

    - In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the center.

      Combine Wet Ingredients:

        - In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until well combined.

          Mix the Ingredients:

            - Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. The batter should be thick and slightly lumpy.

              Heat the Oil:

                - In a large pot or deep fryer, fill with about 2-3 inches of vegetable oil. Heat the oil to 375°F (190°C). You can test the oil by dropping a small amount of batter into it; it should bubble immediately.

                  Shape the Donuts:

                    - Using a donut cutter or two round cookie cutters (one larger and one smaller for the hole), cut out donut shapes from the batter. If you don’t have a cutter, you can simply drop spoonfuls of batter into the hot oil for donut holes.

                      Fry the Donuts:

                        - Carefully drop 2-3 donuts into the hot oil, being sure not to overcrowd the pot. Fry for about 2-3 minutes on each side until golden brown. Use a slotted spoon to flip them.

                          Drain and Coat:

                            - Once golden brown, remove the donuts with a slotted spoon and place them on paper towels to drain excess oil. Allow them to cool for a couple of minutes.
