Chocolate chip cookies have a storied history that dates back to the 1930s when Ruth Wakefield, the owner of the Toll House Inn in Whitman, Massachusetts, created this iconic treat. Originally intended as a variation on traditional butter drop cookies, Ruth added chopped semi-sweet chocolate to the dough, expecting it to melt and create an entirely chocolate cookie. However, the chocolate held its shape, resulting in a delightful blend of soft dough and melting morsels. This serendipitous creation quickly gained popularity, leading to the eventual publication of the famous Toll House cookie recipe in a Boston newspaper. Fast forward to today, chocolate chip cookies are not just a dessert; they are a beloved staple in American households and beyond, with countless variations and interpretations.

Ingredients

1 lb baby carrots (or regular carrots cut into sticks)

2 tablespoons olive oil

3 tablespoons honey

Zest and juice of 1 large orange

Zest and juice of 1 lemon

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley or thyme for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Carrots: If using regular carrots, peel and cut them into even sticks. If using baby carrots, rinse them under cold water and set aside.

Make the Glaze: In a mixing bowl, combine the olive oil, honey, orange zest, orange juice, lemon zest, lemon juice, cinnamon, salt, and black pepper. Whisk until well blended.

Coat the Carrots: Place the carrots in a large mixing bowl and pour the citrus honey glaze over them. Toss until all the carrots are evenly coated.

Arrange on a Baking Sheet: Spread the glazed carrots in a single layer on a baking sheet lined with parchment paper for easy cleanup.

Roast the Carrots: Roast in the preheated oven for about 25-30 minutes, tossing halfway through, until the carrots are tender and caramelized.

Garnish and Serve: Once done, remove the carrots from the oven and sprinkle with fresh parsley or thyme for garnish, if desired. Serve warm as a delightful side dish!
