8 oz elbow macaroni

2 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1/2 cup grated Parmesan cheese

3 cups milk (whole or 2%)

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon Dijon mustard (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup panko breadcrumbs

2 tablespoons olive oil

1/2 teaspoon paprika (for color)

Instructions
 

Cook the Macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1-2 minutes to create a roux. Gradually pour in the milk, whisking constantly to avoid lumps. Cook for about 5-7 minutes, or until the mixture thickens slightly.

      Add Seasonings: Stir in the Dijon mustard, garlic powder, onion powder, salt, and pepper. Gradually add in the cheddar, mozzarella, and Parmesan cheeses, stirring until melted and smooth.

        Combine: Add the cooked macaroni to the cheese sauce, stirring gently until the pasta is fully coated.

          Prepare the Topping: In a small bowl, combine the panko breadcrumbs with olive oil, paprika, and a pinch of salt. Mix until the breadcrumbs are fully coated.

            Bake the Mac & Cheese: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased 9x13 inch baking dish. Top evenly with the breadcrumb mixture.
