4 large eggs

1/4 cup grated Parmesan cheese

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 tablespoon olive oil or melted butter

2 tablespoons fresh chives, finely chopped (or your choice of seasonal herbs such as parsley, basil, or tarragon)

Microgreens for garnish (optional)

Extra seasoning to taste (such as smoked paprika or chili flakes)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper for easy cleanup.

    Separate the Eggs: Carefully separate the egg whites from the yolks, placing the whites in a large bowl and the yolks in individual small bowls.

      Whip the Egg Whites: Using an electric mixer, beat the egg whites on high speed until stiff peaks form, about 3-5 minutes. The egg whites should be fluffy and hold their shape when you lift the beaters.

        Fold in Cheese & Seasonings: Gently fold in the grated Parmesan cheese, salt, pepper, and chopped herbs into the whipped egg whites. Be careful not to deflate the egg whites too much—want them to remain airy.

          Shape the Clouds: Using a spatula, create four mounds of the egg white mixture on the prepared baking sheet. Make a small indentation in the center of each mound where you'll place the yolk later.

            Bake the Cloud Base: Bake in the preheated oven for about 3-5 minutes, or until they start to turn lightly golden.

              Add the Yolks: Carefully navigate the baking sheet from the oven. Gently place a yolk in the indentation of each cloud. Drizzle the yolks with olive oil or melted butter, and sprinkle with additional salt and pepper.

                Final Bake: Return the baking sheet to the oven and bake for an additional 3-4 minutes, until the yolks are just set but still soft.

                  Garnish and Serve: Remove from the oven and let cool for a minute. Garnish with microgreens, if using, and serve immediately while hot.
