Ingredients

2 large apples (Granny Smith or Fuji), peeled, cored, and diced

1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

1 cup granulated sugar

½ cup brown sugar, packed

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

½ cup walnuts or pecans, chopped (optional)

Powdered sugar, for dusting (optional)

Instructions

Preheat your oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Prepare the dry mix: In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon. Set aside.

Cream the butter and sugars: In a large mixing bowl, using an electric mixer, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.

Add the eggs and vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until well combined.

Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined; do not overmix.

Fold in apples and nuts: Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

Bake the cake: Pour the batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the cake: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Dust and serve: Once the cake is completely cool, dust the top with powdered sugar if desired. Slice and serve, either on its own or with whipped cream or ice cream.
