Cold Asian Peanut Noodle Bowl

8 oz rice noodles

1 cup shredded carrots

1 cucumber, julienned

1 red bell pepper, thinly sliced

1 cup edamame, shelled

1 green onion, chopped

1/4 cup cilantro, chopped

1/4 cup roasted peanuts, chopped

1/4 cup creamy peanut butter

2 tbsp soy sauce

2 tbsp sesame oil

2 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tsp grated fresh ginger

1 garlic clove, minced

Juice of 1 lime

Crushed red pepper flakes (optional, to taste)

Instructions
 

Cook the Noodles: Boil a large pot of water. Add the rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prep the Vegetables: While the noodles are cooking, prepare the vegetables. Shred the carrots, julienne the cucumber, thinly slice the red bell pepper, and chop the green onion and cilantro.

      Make the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey or maple syrup, grated ginger, minced garlic, lime juice, and crushed red pepper flakes (if using) until smooth. If the sauce is too thick, add a tablespoon of warm water until you reach your desired consistency.

        Combine Everything: In a large mixing bowl, combine the cooled noodles, shredded carrots, cucumber, red bell pepper, edamame, and green onion. Pour the peanut sauce over the noodle mixture and toss gently until everything is well-coated.

          Chill and Serve: Let the noodle bowl chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Before serving, give it a good stir, then sprinkle with chopped cilantro and roasted peanuts for a crunchy finish.
