Ingredients

8 ounces of pasta (preferably fusilli or penne)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, chopped

½ cup prepared pesto (store-bought or homemade)

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: crushed red pepper flakes for some heat

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain the pasta, then rinse it under cold water to stop the cooking process. Set aside to cool.

Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Set aside.

Mix the Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, and chopped basil.

Add Pesto: Pour the prepared pesto over the pasta mixture and gently toss to coat everything evenly.

Incorporate Dressing: Drizzle the olive oil and balsamic dressing over the pasta and toss again to combine, ensuring all ingredients are well-coated.

Adjust Seasoning: Taste the pasta and adjust seasoning with additional salt, pepper, or crushed red pepper flakes if you prefer some heat.

Chill and Serve: Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold, garnished with additional basil if desired.
