1 cup orzo pasta

2 cups water

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Cook the Orzo: In a medium saucepan, bring 2 cups of water to a boil. Add the orzo pasta and a pinch of salt. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Let it cool completely.

    Prepare the Vegetables: While the orzo is cooling, prepare the vegetables. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, and sliced olives.

      Mix the Salad: Add the cooked and cooled orzo to the vegetable mixture. Gently fold in the crumbled feta cheese and chopped parsley.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust the seasoning to taste.

          Combine and Serve: Drizzle the dressing over the orzo salad and toss everything together gently until all the ingredients are well coated in the dressing.

            Chill: Cover the salad and place it in the refrigerator for at least 30 minutes to allow the flavors to meld.

              Serving Suggestion: For the best flavor, serve it chilled or at room temperature. Optionally, garnish with extra crumbled feta and parsley before serving.
