Cold Lentil and Tomato Salad

Ingredients
  

1 cup green or brown lentils, rinsed and drained

2 ½ cups water or vegetable broth

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 small red onion, finely chopped

½ cup fresh parsley, chopped

¼ cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste

Instructions
 

Cook the Lentils: In a medium saucepan, combine the rinsed lentils and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes or until tender but not mushy. Drain any excess liquid and let the lentils cool completely.

    Prepare the Veggies: While the lentils are cooling, prepare your vegetables. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, chopped red onion, and fresh parsley.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and a pinch of salt and pepper until well combined.

        Combine: Once the lentils have cooled, add them to the mixing bowl with the vegetables. Pour the dressing over the salad and toss gently to combine all the ingredients.

          Add Feta (Optional): If using, sprinkle the crumbled feta cheese over the top of the salad and lightly toss again to incorporate.

            Taste & Adjust: Give your salad a taste and adjust the seasoning by adding more salt, pepper, or dressing if needed.

              Chill & Serve: Let the salad sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature for a refreshing dish!
