Ingredients
  

8 oz spaghetti (whole wheat or regular)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (red and yellow), diced

1 cup broccoli florets, blanched

½ cup red onion, thinly sliced

½ cup black olives, sliced

¼ cup fresh parsley, chopped

⅓ cup feta cheese, crumbled (optional)

½ cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

Instructions
 

Cook the Spaghetti:

    - In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside in a large bowl.

      Prepare the Vegetables:

        - While the spaghetti is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and bell peppers, and blanch the broccoli in boiling water for 1-2 minutes, then transfer to an ice bath to stop cooking. Drain well.

          Combine Ingredients:

            - Add the halved cherry tomatoes, diced cucumber, diced bell peppers, blanched broccoli, sliced red onion, and sliced black olives to the bowl with the spaghetti.

              Dress the Salad:

                - Pour the Italian dressing over the spaghetti and veggie mix. Toss gently to combine all the ingredients thoroughly. Ensure the spaghetti and vegetables are well-coated with the dressing.

                  Season:

                    - Add salt and pepper to taste, and sprinkle the chopped fresh parsley and crumbled feta cheese (if using) over the salad. Toss again to evenly distribute.

                      Chill:

                        - Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld and to serve cold.
