1 cup cottage cheese

1 cup all-purpose flour (plus extra for rolling)

1/2 teaspoon baking powder

1/4 teaspoon salt

1 tablespoon olive oil (plus extra for cooking)

1 teaspoon garlic powder (optional)

1 tablespoon fresh herbs (like dill or chives, finely chopped - optional)

Toppings (such as sesame seeds, flax seeds, or herbs for garnish)

Instructions
 

In a mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, and salt. Stir until a dough starts to form.

    Add the olive oil, garlic powder, and any fresh herbs you wish to incorporate. Mix until well combined. The dough should be soft but not sticky.

      Turn the dough onto a floured surface. Knead gently for about 1-2 minutes until smooth.

        Divide the dough into 4 equal parts and shape each piece into a ball. Let them rest covered with a clean towel for about 10 minutes.

          Preheat a non-stick skillet or griddle over medium heat and add a drizzle of olive oil.

            Roll out one ball of dough on a lightly floured surface to your desired thickness (about 1/4 inch thick works well).

              Carefully transfer the rolled flatbread to the preheated skillet. Cook for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat with the remaining dough balls.
