Ingredients
  

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained (or 2 cups fresh corn)

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and minced (adjust for spice preference)

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Tortilla chips or your choice of crackers (for serving)

Instructions
 

In a large mixing bowl, combine the black beans, kidney beans, and corn. Stir gently to mix.

    Add in the cherry tomatoes, red bell pepper, green bell pepper, red onion, jalapeño, and diced avocado to the bean mixture.

      In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper.

        Pour the dressing over the vegetable and bean mixture. Carefully toss everything together to ensure it’s well-coated but be gentle to avoid mashing the avocado.

          Finally, fold in the chopped cilantro for a fresh burst of flavor.

            Let the Cowboy Caviar sit for at least 30 minutes before serving to allow the flavors to meld. This dish can be served chilled or at room temperature.

              Serve with tortilla chips or your favorite crackers for dipping. Enjoy this vibrant and zesty dish at your next gathering!
