1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) cremini mushrooms, sliced

1 teaspoon paprika

1 tablespoon Worcestershire sauce

1 cup beef broth

1 cup sour cream

Salt and pepper to taste

12 oz (340g) egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Beef: In a large skillet, heat olive oil over medium-high heat. Add the sliced beef and season with salt and pepper. Cook for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.

      Cook the Veggies: In the same skillet, add a little more olive oil if needed. Add the chopped onion and cook for 2-3 minutes until translucent. Stir in the minced garlic and cook for another minute. Add the sliced mushrooms and paprika, cooking until the mushrooms are browned and have released their moisture (about 5-7 minutes).

        Combine Ingredients: Add the Worcestershire sauce and beef broth to the skillet, stirring well. Bring to a simmer, then lower the heat. Return the cooked beef to the skillet and let it simmer for about 5 minutes so the flavors meld together.

          Finish the Sauce: Stir in the sour cream until well combined. If the sauce is too thick, you can add a splash of reserved pasta water until desired consistency is reached. Taste and adjust seasoning with salt and pepper.

            Serve: Place the drained egg noodles on plates or in bowls. Spoon the beef stroganoff mixture generously over the noodles. Garnish with fresh chopped parsley before serving.
