1 medium onion, diced

3 cloves garlic, minced

1 medium potato, peeled and diced

4 cups vegetable broth (or chicken broth)

1 cup heavy cream (or coconut milk for a vegan option)

2 tablespoons olive oil

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Red pepper flakes (optional, for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Cook the Vegetables: Add the chopped cauliflower florets and diced potato to the pot. Stir well to combine and let them cook for about 5 minutes.
