Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the puff pastry sheets and cut into 3x3 inch squares, yielding about 16 squares.
Place a cube of Brie cheese in the center of each square and top with one tablespoon of cranberry sauce. Season with salt and pepper.
Fold the corners of each puff pastry square inward to seal in the filling and pinch the edges to secure.
Brush the tops of each pastry pocket with the beaten egg.
Bake the assembled bites in the preheated oven for about 15-20 minutes until golden brown and puffed.
Remove from the oven, let cool slightly, and sprinkle with fresh rosemary or thyme if desired.
Serve warm as an appetizer or snack.

Best served warm and fresh out of the oven.
