1 lb (450g) ground beef

1 can (15 oz) red kidney beans, rinsed and drained

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes (with juice)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

3 tablespoons chili powder

2 teaspoons cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (to taste)

1/2 teaspoon black pepper (to taste)

1 tablespoon olive oil

1 cup beef broth

Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions
 

Brown the Beef: In a skillet over medium heat, add the olive oil. Once hot, add the ground beef, breaking it up as it cooks. Brown the beef for about 5-7 minutes until fully cooked. Drain excess fat if necessary.

    Prep the Vegetables: While the beef is browning, chop the onion, garlic, and bell peppers.

      Combine Ingredients: In the crockpot, combine the browned beef, kidney beans, black beans, diced tomatoes (with juice), onion, garlic, and bell peppers.
