Ingredients

8 oz elbow macaroni

1 cup frozen peas

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. In the last minute of cooking, add the frozen peas. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour, stirring constantly for about 1-2 minutes until it forms a paste (roux).

Add Milk: Gradually whisk in the milk, ensuring no lumps remain. Keep stirring until the mixture thickens and bubbles gently, around 5-7 minutes.

Season the Sauce: Lower the heat and stir in the Dijon mustard, garlic powder, onion powder, black pepper, and salt. Mix well to combine.

Incorporate Cheeses: Remove the pot from heat and add the shredded cheddar and half of the Parmesan cheese. Stir until the cheese is fully melted and the sauce is nice and creamy.

Combine Pasta and Peas: Fold the cooked macaroni and peas into the cheese sauce until well coated.

Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish.

Breadcrumb Topping: In a small bowl, combine the breadcrumbs, remaining Parmesan cheese, and olive oil. Sprinkle this mixture evenly over the macaroni and cheese.

Bake: Place the baking dish in the oven and bake for about 20-25 minutes, or until the top is golden brown and crispy.

Serve: Allow the mac and cheese to cool for a few minutes before serving. Garnish with fresh parsley for an added burst of color and flavor.
