1 lb Italian sausage (bulk or casings removed)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 (14 oz) can diced tomatoes, with juices

1 (9 oz) package fresh cheese tortellini

4 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

    Add the minced garlic to the onions and cook for an additional 1 minute until fragrant, stirring frequently to prevent burning.

      Add the Italian sausage to the pot. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

        Stir in the chicken broth, diced tomatoes (with their juices), dried oregano, dried basil, and season with salt and pepper. Bring the mixture to a boil.

          Once boiling, reduce to a simmer and add the cheese tortellini. Cook according to package instructions, usually about 3-5 minutes, until tortellini is tender.

            Stir in the chopped spinach just before serving and let it wilt for a minute or two.

              Taste the soup and adjust seasoning if necessary.

                To serve, ladle the soup into bowls, and sprinkle with grated Parmesan cheese and garnish with fresh basil leaves.
