2 large sweet potatoes, peeled and diced

1 pound ground turkey

1 medium onion, chopped

3 cloves garlic, minced

1 cup cooked black beans (canned, drained and rinsed)

1 cup corn (fresh, frozen, or canned)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder (adjust to taste)

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

Fresh cilantro or parsley for garnish

2 tablespoons olive oil

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare the sweet potatoes: In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook for about 10-12 minutes until tender. Drain and set aside.

      Cook the turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the garlic and cook for another minute until fragrant.

        Add the ground turkey: Increase the heat slightly and add the ground turkey to the skillet. Season with salt, pepper, cumin, smoked paprika, and chili powder. Cook until the turkey is browned and cooked through, breaking it apart with a spoon (around 5-7 minutes).

          Combine ingredients: Stir in the cooked sweet potatoes, black beans, and corn into the turkey mixture. Mix thoroughly to combine all the flavors, cooking for an additional 3-5 minutes on medium-low heat.

            Transfer to baking dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly. If using cheese, sprinkle it generously on top.

              Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until heated through and the cheese is bubbly and golden (if used).

                Garnish and serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh cilantro or parsley before serving.
