1 medium onion, diced

2 garlic cloves, minced

2 medium carrots, diced

2 celery stalks, diced

1 bell pepper (any color), diced

1 zucchini, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup cooked chicken, shredded (rotisserie chicken works great!)

4 cups low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, with juices

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 cups fresh spinach or kale

Juice of 1 lemon

Fresh parsley for garnish (optional)

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing for about 2-3 minutes until the onion is translucent.

    Add More Veggies: Stir in the diced carrots, celery, and bell pepper. Cook for another 2-3 minutes until they start to soften.

      Incorporate Other Ingredients: Add the zucchini, green beans, cooked chicken, chicken broth, diced tomatoes (with juices), dried thyme, oregano, salt, and pepper. Stir well to combine.
