Ingredients

For the Pie Filling:

3 cups apples (peeled, cored, and sliced thinly; a mix of Granny Smith and Honeycrisp works well)

2 cups fresh cranberries (you can use frozen, thawed cranberries as well)

1/2 cup granulated sugar

1/4 cup brown sugar

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

Juice of 1 lemon

Zest of 1 lemon

1/4 teaspoon salt

For the Crust:

1 1/4 cups all-purpose flour

1/4 teaspoon salt

1/2 cup unsalted butter (cold, cut into small pieces)

3 to 4 tablespoons ice water

For the Crumble Topping:

1 cup rolled oats

3/4 cup all-purpose flour

1/2 cup brown sugar

1/2 teaspoon ground cinnamon

1/2 cup unsalted butter (melted)

1/2 cup chopped walnuts or pecans (optional)

Instructions

Prepare the Pie Crust:

    - In a large mixing bowl, combine 1 1/4 cups flour and 1/4 teaspoon salt.

      - Cut in the cold butter pieces until the mixture resembles coarse crumbs.

        - Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together.

          - Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

            Make the Filling:

              - In a large bowl, combine sliced apples, fresh cranberries, granulated sugar, brown sugar, flour, ground cinnamon, lemon juice, lemon zest, and salt. Toss until the fruits are well coated. Set aside to let the mixture marinate.

                Preheat the Oven:

                  - Preheat your oven to 375°F (190°C).

                    Roll Out the Crust:

                      - On a floured surface, roll out the chilled pie crust to fit a 9-inch pie dish. Transfer the crust to the dish and trim excess edges.

                        Assemble the Pie:

                          - Spread the apple and cranberry filling evenly over the crust.

                            Prepare the Crumble Topping:

                              - In a medium bowl, mix rolled oats, flour, brown sugar, ground cinnamon, and melted butter. If using, fold in chopped nuts until combined.

                                - Sprinkle the crumble mixture evenly over the fruit filling.

                                  Bake:

                                    - Bake in the preheated oven for 45-50 minutes or until the topping is golden brown and the filling is bubbling. If the topping browns too quickly, cover the pie loosely with foil.

                                      Cool and Serve:

                                        - Allow the pie to cool for at least 30 minutes before slicing. Serve warm, optionally topped with vanilla ice cream or whipped cream.
