Creamy Avocado Lime Chicken Pasta

12 oz fettuccine or spaghetti

2 ripe avocados, pitted and peeled

1 cup heavy cream

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 lime (zested and juiced)

2 cups cooked chicken, shredded (grilled or rotisserie)

1 cup cherry tomatoes, halved

1/2 cup fresh cilantro, chopped

Salt and pepper to taste

Olive oil, for cooking

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Prepare the Avocado Sauce: While the pasta cooks, place the avocados, heavy cream, chicken broth, garlic powder, onion powder, lime zest, and lime juice into a food processor. Blend until smooth and creamy. If the sauce is too thick, you can add a bit of the reserved pasta water to reach your desired consistency.

      Combine Ingredients: In a large skillet, heat a drizzle of olive oil over medium heat. Add the cooked chicken and halved cherry tomatoes. Sauté for about 3-4 minutes until the tomatoes start to soften.

        Mix in Pasta: Add the drained pasta to the skillet with the chicken and tomatoes. Pour the avocado sauce over the top and gently toss everything together until well combined. If the mixture appears too thick, add a little more of the reserved pasta water to loosen it.

          Season and Serve: Season with salt and pepper to taste. Add the chopped cilantro and give it one final toss. Serve hot, garnished with additional cilantro and grated Parmesan cheese if desired.
