Creamy Bacon Pork Chops

4 bone-in pork chops (about 1 inch thick)

6 strips of bacon, chopped

1 medium onion, finely diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon Dijon mustard

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season both sides of the pork chops with salt and pepper. Let them sit at room temperature for about 15 minutes to ensure even cooking.

    Cook the Bacon: In a large skillet over medium-high heat, add the chopped bacon. Cook until crispy, then remove the bacon bits with a slotted spoon and set aside, leaving the bacon fat in the skillet.

      Sear the Pork Chops: In the same skillet with the bacon fat, add olive oil if needed to prevent sticking. Carefully add the pork chops and sear them for about 4-5 minutes on each side until golden brown. Remove the pork chops from the skillet and set aside.

        Sauté Onions and Garlic: In the same skillet, add the diced onion and cook for about 3-4 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.

          Make the Creamy Sauce: Lower the heat to medium, then pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream, Dijon mustard, and thyme. Allow the mixture to simmer for about 3-4 minutes until slightly thickened.

            Combine and Cook: Return the seared pork chops to the skillet, spooning the creamy sauce over them. Simmer for an additional 8-10 minutes, or until the pork is cooked through (internal temperature should reach 145°F or 63°C).

              Finish with Bacon: Stir the cooked bacon into the sauce just before serving. Adjust seasoning with salt and pepper if needed.
