Creamy Broccoli and White Cheddar Soup

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

2 cups shredded white cheddar cheese

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon nutmeg (optional)

2 tablespoons lemon juice

Croutons or fresh herbs for garnishing (optional)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
