1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded (or any cheese of your choice)

2 tablespoons olive oil

2 tablespoons all-purpose flour

1 teaspoon salt (to taste)

1/2 teaspoon black pepper (to taste)

1/4 teaspoon nutmeg (optional)

Fresh chives or parsley for garnish (optional)

Prepare the Broccoli: Start by washing and chopping the broccoli into small, bite-sized florets. Set aside.

    Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook for another minute, being careful not to let it burn.
