2 cups fresh broccoli florets

2 medium potatoes, peeled and diced

1 cup onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes until they are translucent. Add the minced garlic and cook for an additional minute until fragrant.

    Cook the Potatoes: Add the diced potatoes to the pot, stirring to coat them in the oil. Allow them to sauté for about 3-4 minutes.

      Add Broccoli and Broth: Stir in the broccoli florets, dried thyme, paprika, salt, and pepper. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes and broccoli are tender.
