2 cups cooked white or brown rice

3 cups fresh broccoli florets (you can also use frozen if needed)

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup (homemade or canned)

1/2 cup sour cream

1 cup low-sodium chicken or vegetable broth

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup breadcrumbs (for topping)

1 tablespoon olive oil

Optional: 1/2 cup grated Parmesan cheese for extra flavor

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam the florets for about 3-4 minutes until they are bright green and slightly tender. If using frozen broccoli, follow package instructions to thaw and drain the excess water.

      Make the Sauce: In a large bowl, combine the cream of mushroom soup, sour cream, chicken or vegetable broth, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are blended together smoothly.

        Combine Ingredients: Add the cooked rice, steamed broccoli, and 3/4 cup of the shredded cheddar cheese to the sauce mixture. Stir gently until everything is well combined, ensuring the broccoli and rice are coated with the sauce.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Top it Off: In a small bowl, mix the breadcrumbs with the olive oil and the remaining shredded cheddar cheese (and Parmesan, if using). Sprinkle this mixture evenly over the casserole.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until it’s hot and bubbly, and the top is golden brown.
