8 oz (about 225g) pasta of choice (penne or fusilli work great)

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1/2 small onion, finely chopped

2 cloves garlic, minced

1/2 cup buffalo sauce (adjust to taste)

1 cup heavy cream or coconut cream for a dairy-free version

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional, for garnish)

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
