Creamy Caprese Orzo

1 cup orzo pasta

1 tablespoon olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup mozzarella balls (bocconcini), halved

½ cup cream cheese, softened

½ cup grated Parmesan cheese

¼ cup fresh basil leaves, chopped

Salt and pepper, to taste

Balsamic glaze, for drizzling

Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Be careful not to burn it.

      Add the Veggies: Add the halved cherry tomatoes and chopped spinach to the skillet. Cook for about 3-4 minutes, stirring occasionally, until the tomatoes start to soften and the spinach wilts.

        Combine the Cheeses: Lower the heat and add the softened cream cheese and grated Parmesan to the skillet. Stir until the cheeses melt and combine into a creamy sauce.
