8 oz (225 g) penne pasta

2 cups broccoli florets

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 cup heavy cream

1 cup chicken broth

1/2 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Add the broccoli florets in the last 2-3 minutes of cooking. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic, oregano, basil, black pepper, and salt, cooking for another minute until fragrant.

      Prepare the Creamy Sauce: Reduce the heat to low and add the heavy cream, chicken broth, and softened cream cheese to the skillet. Stir until the cream cheese is melted and the mixture is well combined and creamy.

        Combine Ingredients: In a large bowl, mix the cooked pasta, broccoli, shredded chicken, and creamy sauce until everything is evenly coated. Stir in half of the sharp cheddar and mozzarella cheese, reserving the rest for the topping.
