4 boneless, skinless chicken breasts (about 1.5 lbs)

2 cups mushrooms, sliced (cremini or button)

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked pasta or rice (for serving, optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, smoked paprika, and dried thyme on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add butter and sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and sliced mushrooms, cooking until the mushrooms have released moisture and are golden brown, about 5-6 minutes.

        Create the Sauce: Pour in the chicken broth, scraping the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes. Lower the heat and stir in the heavy cream, mixing well. Allow the sauce to thicken slightly for about 4-5 minutes.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet, spooning the creamy sauce over the top. Let it simmer together for another 3-4 minutes so the chicken can absorb the flavors.
