Creamy Chicken and Rice Casserole

2 cups cooked chicken, shredded or diced

1 cup long-grain white rice

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth (low sodium)

1 cup milk

1 cup frozen mixed vegetables (carrots, peas, corn)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp dried thyme

1 tsp onion powder

1/2 tsp black pepper

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup breadcrumbs (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, cook the long-grain rice according to package instructions, but reduce cooking time by 5 minutes. Drain and set aside.

      Sauté Aromatics: In a large skillet over medium heat, add a splash of olive oil. Sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and sauté for another minute until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, sautéed onions and garlic, cream of chicken soup, chicken broth, milk, mixed vegetables, dried thyme, onion powder, and black pepper. Stir well until all ingredients are fully combined.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish. Spread it evenly.

            Add Cheese: Sprinkle the cup of shredded cheddar cheese over the top. If using, sprinkle breadcrumbs evenly for an extra crunchy texture.

              Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden brown.
