1 lb (450g) boneless, skinless chicken breasts, diced

1 cup uncooked white rice (preferably jasmine or basmati)

1 medium onion, finely chopped

2 garlic cloves, minced

3 medium carrots, diced

2 celery stalks, diced

4 cups low-sodium chicken broth

1 cup whole milk (or heavy cream for extra creaminess)

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon (optional, for brightness)

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the garlic and cook for an additional minute until fragrant.

    Brown the Chicken: Add the diced chicken to the pot and season with salt, pepper, thyme, and oregano. Cook for 5-7 minutes until the chicken is browned on the outside but not fully cooked through.

      Add Vegetables: Stir in the diced carrots and celery, cooking for another 4-5 minutes until they start to soften.

        Mix in the Rice and Broth: Pour in the chicken broth and add the uncooked rice. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 15-20 minutes, or until the rice and chicken are cooked through.

          Make it Creamy: Once the chicken and rice are done, stir in the whole milk (or heavy cream) until combined. Allow it to heat through for another 2-3 minutes. Adjust seasoning with salt, pepper, and lemon juice if desired.
