Creamy Chicken and Spinach Skillet Pasta

12 oz. penne pasta

2 tablespoons olive oil

1 lb. boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

4 cups fresh spinach

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts, and season with onion powder, Italian seasoning, salt, and pepper. Cook for about 6-8 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Build the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.

        Add Spinach and Tomatoes: Stir in the fresh spinach and cherry tomatoes. Cook for about 2-3 minutes, or until the spinach starts to wilt.

          Combine and Cook: Return the cooked chicken to the skillet. Gradually add the grated Parmesan cheese, stirring until the sauce is creamy and smooth. If the sauce is too thick, add some reserved pasta water until the desired consistency is reached.

            Mix in the Pasta: Add the cooked penne pasta to the skillet, tossing gently until the pasta is well coated with the creamy sauce. Taste and adjust seasoning if necessary.

              Serve: Remove from heat and garnish with fresh basil leaves. Serve immediately, offering extra Parmesan cheese on the side if desired.
